Tired of Cooking? Easy and Delicious Ways to Get Your Veggies

Want an easier way to get your veggies? Looking for a satisfying way to cook vegetables that doesn’t involve multiple steps and hours of cooking?


Most of my friends and family already know this about me, but …. I HATE to cook! 😉


I know… this may be surprising given my role as a nutrition coach, but I’m the queen of healthy and quick convenience foods. Anything to help limit the time I need to spend in the kitchen. When I do cook (which must happen occasionally), it has better be easy, ideally less than 5 ingredients and SUPER satisfying (because eating satisfying food is the only way to get and stay forever-fit!).

One of the quick and easy ways I’ve been getting my veggies (& fruits!) lately is by roasting them in the oven.

With fall here, I’ve been branching out and trying many of the fall veggies. I don’t normally include them in my vegetable rotation. They include butternut squash, cabbage, acorn squash, Brussels sprouts and more.

Healthy eating should be ALL about satisfaction. Quite a few people tell me they hate eating vegetables because they don’t find them satisfying.

If you haven’t tried roasting vegetables to get your veggies, I highly suggest giving that a try. I know many “non-vegetable lovers” who still find roasted vegetables delicious.

You can find many great recipes online where you can make healthy sauces or other additions with the veggies to enhance the taste even more.

Or you can simply follow my favorite (and simple!) way to roast veggies, by tossing your favorite vegetable in light olive oil, pepper and sea salt. Then cook them in the oven at 425 degrees for about 20-25 minutes (or until they turn golden brown… and see…. super easy and still less than 5 ingredients! 😉
